Celebrating America's 250th Anniversary: A Few Fun Pork Facts from History

As the United States marks its 250th anniversary, we thought it would be fun to look back at a few memorable moments where pigs and pork played a surprising role in American history.

Fueling the Fight for Independence - During the harsh winter of 1777 at Valley Forge, salt pork was a staple ration for George Washington's troops. Along with flour and other preserved foods, it helped sustain soldiers through one of the most challenging periods of the Revolutionary War.

The Hogs Behind Wall Street - Believe it or not, pigs played a small role in the story of Wall Street. In colonial New York, free-roaming hogs frequently wandered into farmers' fields, causing plenty of trouble. To help protect crops and define the northern boundary of the settlement, residents built a wall across lower Manhattan. The road that ran alongside it eventually became known as Wall Street.

Welcome to Porkopolis - In the mid-1800s, Cincinnati, Ohio, became one of the largest pork-processing centres in North America. The city handled so many hogs that it earned the famous nickname "Porkopolis"—a title that reflected the importance of pork production to the growing American economy.

From feeding troops during the Revolution to helping shape famous cities and landmarks, pigs have been part of the American story from the very beginning. As we celebrate 250 years of history, it is worth remembering the important role the pork industry has played in helping build the nation.

AI in Animal Protein

Benchmark Magazine is published each spring to highlight the annual results of PigCHAMP's Benchmarking program, and to feature news, commentary and articles of interest written by pork industry experts. The 2026 Benchmark featured an article on AI in Animal Protein Production.

“Artificial intelligence (AI) has gone from being a buzzword, a vision of tomorrow, to a priority topic in many businesses today. And in agriculture, nowhere is that shift more visible than in animal protein production.

For larger pork producers, integrators, and retailers, AI is no longer a distant concept or experimental tool; it’s rapidly becoming the difference-maker in terms of operational efficiency, supply chain resilience, and long-term competitiveness…”
